Pesto Kale Sweet Potato Pizza

You know how when you’re a kid your favorite food is pizza?
That’s still true, right? Every kids favorite food is pizza?
Well, when I was a kid, pizza was my favorite food.
As I started getting older and turning more into a “foodie” I stopped caring about pizza as much. I wanted to broaden my horizons and eat more than just dough with red sauce and cheese.

But, when I make a pizza like this or this or this or this, I remember how much I really do love pizza. I love that it’s simple to make and you can put whatever you like on it. I’ve put some pretty interesting foods on my pizza’s in the last few years. I never dreamt as a kid that I’d be topping my pizza with kale. Heck, I’m pretty sure when I was a kid kale didn’t exist.

Seriously…did kale exist in your house when you were 5? How about 10? 15? Hmmm…where was it?!

I’m really happy kale now exists because I love putting it on my pizzas! It’s one of those ingredients that will make pizza continue to be one of my favorite foods as an adult. Paired with a simple salad, beer or wine, pizza wins my heart.

Try out this recipe this fall as all the flavors are perfect for the cooler weather that’s to come.

Pesto Kale Sweet Potato Pizza
1 pizza dough
3 Tablespoons prepared pesto
2 tablespoons olive oil
1 small head kale, rinsed, & torn
1 large or 2 small sweet potatoes, peeled & shredded
1 small red onion, halved & sliced
4 oz mozzarella cheese, shredded
Salt and pepper
1. Preheat oven and pizza stone to 500 degrees
2. In a large bowl drizzle olive oil over kale, sweet potato, and red onion. Season with salt and pepper and toss until thoroughly coated in oil. 
3. Roll out pizza dough and spread pesto all over. Top dough with the kale, sweet potato, and red onion. The pizza will be piled high but go ahead and sprinkle the mozzarella cheese on top. Bake for 12-15 minutes until crust is lightly golden.

Hey girl! This pizza looks great. You know how I love my kale. I love the combination of kale and sweet potatoes and of course some red onion. Perfect pizza toppings for me 🙂
I could eat kale on just about anything. I actually mixed in some kale salad on my summer garden pasta the other day and it was even better with the kale in it. 🙂

Yum, this is my kind of pizza! And I know, what a shame that we didn’t have kale growing up! I love that stuff now.

I still love traditional pizza but I also love experimenting with toppings I never would have tried as a kid either! I just threw some kale on a naan pizza the other week and loved it!

making this. soon. i will use the kale from my garden 🙂 i love shifting away from the typical American pizza of red sauce and cheese and crazy crusts. veggies of all kinds should find their way on pizzas. mmmm yum.
