Pork Veggie Lettuce Wraps

Hello! Happy Sunday!

I’m just sitting here, wishing I were having these lettuce wraps for dinner tonight, but I’ll have to make do with vegetarian lentil soup tonight, which is also delicious.

As soon as I had laid my eyes on this recipe over at Simply Scratch, I knew it wouldn’t take me long to try them out. I’ve since made them twice, and this recipe is definitely a keeper. Although it’s made with ground pork, which we all know is not the healthiest, it just gives this meal such amazing flavor! It’d be hard for me to make them without the pork now, but ground turkey or chicken would also be tasty and also healthier.

This recipe takes me about 40 minutes to make, so it’s a little longer than I like for during the week, but it’s well worth it. The main time hogging part is dicing up all those veggies. Isn’t that bowl beautiful though? I love lots of color in my cooking.

I’ve decided that this meal is delicious for spring and summer, because the veggies are left raw, which is nice on a hot day. The left overs are also very satisfying for lunch. I think I’ll be making this recipe for one of my next dinner get together with our friends, Jeff & Debby. Yeah, I kind of plan ahead and think about what I could make wayyy in advance.

Pork Veggie Lettuce Wraps
Recipe adapted from Simply Scratch

1 pound ground pork1 tablespoon ginger, peeled & grated
6 cloves garlic, minced 1 small cucumber, peeled, seeded, & diced
1 red bell pepper, diced
1 carrot, diced
1 jalapeno, seeded & diced
1/4 cup cilantro, chopped
1/4 cup peanuts, roughly chopped {plus more for garnish}
3 tablespoons fresh lime juice
1 tablespoon fish sauce
1 teaspoon honey
1 package butter lettuce, leaves removed, washed & dried
2 green onions, chopped {for garnish}

1. Preheat a non-stick skillet over medium high heat; add in pork and cook until lightly browned. Add in the ginger and garlic and saute with pork for a few minutes.

2. In a large bowl; combine cucumber, red bell pepper, carrot, jalapeno, cilantro, and peanuts. When the pork is completely cooked, add to the veggie bowl.

3. In a small bow; combine lime juice, fish sauce, and honey. Pour juice over veggie pork bowl and stir.

4. Fill lettuce cups with veggie pork mixture and garnish with green onions & peanuts.

These look awesome! I love lettuce wraps, but I don’t make them often anymore. We buy mostly spinach instead of Romaine. Need to get back on that!
