Curried Chickpea Salad

When I first saw the picture on FoodGawker for this recipe I thought it looked so good. I saved it to try later, and then I put it off for months. A couple weeks ago I finally revisited the recipe and decided to buy the ingredients. As luck would have it, I didn’t end up making the recipe that week. I finally made it last week, and I’m glad I did! It’s packed with a ton of flavor. I love anything curry so this is perfect for me. Plus, it’s vegetarian, which you know is always an added bonus in my book. I really enjoyed the spices from the curry, but also the sweetness from the raisins, and the crunch from the apple. It was diversified, and I really liked that. To be honest, I didn’t have high hopes for it. I love when a new recipe surprises me. 
 
I think the best part is that you can use this curry chickpea filling in so many different ways. I served it over some lettuce & added some goat cheese. I just doubled the recipe for the dressing and tossed my greens in it. I think the dressing is really good! I’d make it again, even if I didn’t do the curry chickpea salad. The next day for lunch I used the remaining greens & chickpeas in a tortilla, and it made a delicious wrap! This would be great for a light dinner for 2 or a hearty lunch for 2-3. 
Curried Chickpea Salad
Recipe adapted from a Couple Cooks
1 (15oz) can chickpeas, drained
1 apple, diced
4 green onions, chopped
1/4 cup golden raisins
3 tablespoons Greek yogurt
1/2 tablespoon mustard
1 tablespoon lemon juice
1 teaspoon curry powder
1/4 teaspoon kosher salt

1 teaspoon honey
goat cheese crumbles (optional)
lettuce (optional)
1. In a large bowl, mash chickpeas until they are just start to mush down. Stir in apple, green onions, and raisins. 
2. In a small bowl; combine yogurt, mustard, lemon juice, curry powder, salt, and honey. 
3. Pour dressing over chickpea mixture and combine. Serve over a salad with goat cheese crumbles or wrap in a tortilla.

this sounds awesome! we made a curry chicken + rice casserole for dinner last night, so i still have curry on the brain. i’d love this!

Oh my, that looks wonderful. I made a curry tuna salad with Greek yogurt not long ago, and it was good. This looks better though – especially because of the raisins!
