Winter Kale Salad

I’m not going to lie to you. I’ve been scared of trying kale salad. I tore out this recipe from Rachael Ray Everyday back in the end of 2010 with plans on making the recipe soon. It took me till March 2012 to actually make it. I was just scared, ya know? I mean, kale is thick,curly, and dark green. When I eat salads the lettuce is usually my least favorite part, it’s just the vessel to eat all the other yummy stuff. Since my dad went on his juice diet last summer, kale has been in my life a lot more. It’s constantly being juiced and I’ve recently become obsessed with kale chips. Also, seeing Aubrey’s kale salad made me want to try one a-sap! So, I went for it. I made kale salad and on a Friday night to boot!

Let me tell you, I am no longer afraid of kale salad. In fact, I’m excited to try more. I will soon be making Aub’s. Yes, I call her Aub, even though we’ve never met.

The flavor of this salad is slightly sweet from the jam and the kale itself, I taste a bit of banana…anyone ever tasted that? It’s also peppery and spicy. I think it’s just well balanced between sweet and spicy and I really dig that.

Winter Kale Salad

recipe adapted from Rachael Ray Everyday
2 cloves garlic, minced
2 teaspoons raspberry or mixed berry jam
1 1/2 teaspoons spicy brown mustard
1 1/2 teaspoons apple cider vinegar
3 tablespoons olive oil
1 small bunch kale, torn and washed
2 cups shredded beets
1 cup thinly sliced radishes
2 tablespoons pumpkin seeds
1. In a small bowl combine garlic through olive oil.
2. In a large bowl; dress kale with the dressing. Really make sure to get the dressing all over the leaves. Top with beets, radishes, pumpkin seeds, and salt and pepper to taste.

I’ll be honest. I’ve been scared to try it, too. But I keep hearing people like it, so maybe I’ll give it a try sometime 🙂

I have never had a kale salad either, but this looks really awesome. I actually have about 2 tsps of raspberry jam in my fridge right now, I might need to give this a whirl.

I love kale! I’ve never used it in a fancy recipe salad before, but am always throwing it into our everyday bowls!

Kale is so awesome, a lot of people I know are scared to eat it raw but I think it’s lovely. My current fave salad is kale, red peppers, goat cheese & a mustard/garlic/peppercorn dressing I make. Nom nom!
