Chicken Sausage, Potato, Cabbage Hash

Dare I say life is getting somewhat back to normal? I don’t want to jinx it but David, Ryder, and I seem to be getting somewhat back into a routine. Last week we found a running route near our house and today we went again after work. I’m hoping to continue running this route as much as possible with Ryder even after David joins another CrossFit box. Some how with packing up our life back in January, dreary winter weather, and a decline in mine and David’s physical activity Ryder gained some weight. I noticed in his neck and kept telling David I though he’d gained some weight. Finally David stared to believe me a little more when everyone who saw him would proclaim how “big” he’s gotten. Ryder had a vet appointment last month and we learned that he’d gained about 14 pounds since the last time! We were in absolute shock. Our little labby boy is in the 80’s…we’re both working on getting him back down in the lower 70’s. I can tell he’s already lost some weight in one month which makes me very proud.

As I sit here writing this post, Ryder is by my side on the couch in our living room. This is very unusual behavior for him, so I’m wondering if he’s really back on his regular schedule. He’s done very well with the move. He loves his new house, the stairs, his backyard, and his new neighborhood. He loves sitting out in the sun by our front door while we work out there or in the garage with David while he works on projects. It’s so cute to see him “guarding” his new home. I’m having a hard time understanding why he’s been more lovey lately. I guess he’s still getting used to his new routine. I’m so thankful for his extra love though. Ryder’s never been a very cuddly dog, so this is heaven for me. I wouldn’t change it for anything.

 After our (just about) 4 mile run this afternoon, I came home and whipped this one pot meal together. While everything was cooking in the pot, I made a simple delicious salad to serve on the side. Dinner came together very quickly which is great considering I had an almost hour commute home, went on a jog, and had plenty of chores to attend to.

What I love about this dinner is the ease of it. Simply chop your potatoes, get them in the pot and add your onions. Let that cook while you finish chopping the sausages and cabbage. It’s really such an easy meal. Plus, it made a ton which is great for us because we’re huge fans of leftovers. I’m having my leftovers over mixed greens tomorrow with some sunflower seeds and dressing. I can’t wait! Definitely give this easy, paleo inspired meal a try soon. You won’t regret it. 

Chicken Sausage, Potato, Cabbage Hash
An easy paleo one pot meal perfect for the middle of the week.

Ingredients
  1. 1 tablespoon olive oil
  2. 4 medium red potatoes, diced (about 1/2" cubes)
  3. 1 large yellow onion, chopped
  4. 4 or 5 chicken sausages (or kielbasa), sliced lengthwise and chopped
  5. 1 head cabbage, cored and roughly chopped
  6. 2 teaspoons apple cider vinegar
  7. 1 1/2 teaspoons Dijon mustard
  8. 1 teaspoon Kosher salt
  9. 1/2 teaspoon ground pepper
Instructions
  1. In a large pot or Dutch oven; heat olive oil over medium heat.
  2. Stir in potatoes and onions. Sauté for 10-15 minutes (to really ensure the potatoes get soft). Stir in chicken sausages and sauté about another 5-10 minutes until some color develops. Stir in cabbage and sauté until soft.
  3. In a small bowl whisk together apple cider vinegar and mustard. Pour into pot and stir until potatoes are soft. Season with salt and pepper.

This looks so good Kelly! Cabbage is one of my favorite foods and I put a cup+ in my salad every day. Do you think it would taste similar if I used sweet potatoes instead of red? I have all of these ingredients right now except for the potatoes.

Andddd now I am craving cabbage like a weirdo at 8:56AM. Guess I will need to make this recipe ASAP.
