This pizza surprised me. I didn’t realize how delicious it would be. Sure, I thought it’d be tasty, but I definitely didn’t expect it to become one of my favorite pizzas. This pizza was super easy to make, had a minimal ingredient list, and the flavor is top notch.
I made it after I unexpectedly went on a ridiculous long run/walk back on Presidents Day, and couldn’t think of a more perfect meal of pizza and salad after 8 miles. It ended up being so good I made it less than a week later. I knew I had to share this tasty and ridiculously easy pizza with you!
I’ve mentioned before, but pizza stones are where it’s at. If you’re wondering why your homemade pizzas are not really that awesome, it’s because you’re not using a pizza stone! I place our pizza stone in the oven while the oven preheats to 500 degrees. Once it’s preheated, I carefully remove the pizza stone, sprinkle it with cornmeal, lay the dough out onto the hot stone, and carefully roll it out. When I roll it out onto the hot stone I almost immediately see that the stone is already baking the dough. It’s quite magical! Do yourself a favor and buy yourself a pizza stone.
Spinach Artichoke Pizza
1 pizza dough
1/4 cup pesto
3-4 large handfuls fresh spinach, roughly chopped
1 (15 oz) can artichoke hearts, chopped
6 oz mozzarella, shredded
1. Preheat oven & pizza stone to 500 degrees.
2. Roll out pizza dough on pizza stone or baking sheet. Spread pesto around the dough. Top with spinach, artichoke hearts, and mozzarella. Bake pizza for 10-15 minutes or until lightly browned and bubbly.
