Blueberry Spinach Smoothie


Last Sunday when I woke up I had a terrible headache and nothing sounded good to eat. I tried drinking some coffee, but it just made me feel gross. I finally got out of bed and made myself my currently favorite smoothie. Ever since Christmas when I made Lemon Blueberry Cream Cheese Pie I've been buying large bags of frozen blueberries. I don't know when but for a long time I stopped putting blueberries in my smoothies. I'm happy to report that I am now putting them in my smoothies again.


I guess I kind of go through stages of what I put in smoothies. For the longest time I only liked banana, strawberry, blueberry, and then it was spinach, banana, mango, pineapple, coconut milk (still my favorite!), but this smoothie just seems so healthy to me. When I drink it I picture myself as being the epitome of health. Totally normal, right?  I included a picture of the actual blender so that you could see how much spinach I have in there. I say a large handful of spinach and I really mean it! I think my large handful equals about 1 cup according to the blender lines.

 
Sometimes smoothies are just the best. They can be a quick breakfast or a healthy snack or dessert. I find this one to be especially delicious, and I hope you do too! Happy Friday!

Blueberry Spinach Smoothie
Makes 1

1 large handful spinach
1 frozen banana
3/4 cup frozen blueberries
1 cup coconut water, water, or any liquid

Directions:
Place all ingredients in blender and blend until completely smooth.

  1. I love that combo! Try adding cocoa powder (or chocolate protein powder) and almond milk.. and a splash of espresso or lack coffee - blueberry mocha smoothie! So tasty :) I load up on the spinach too, you can't taste it and you get a ton of greens!

  2. Simple and quick! :) I love smoothies but typically have to eat more for breakfast. I prefer them as a mid-morning or afternoon snack.

    1. I have to eat more than a smoothie for breakfast, too. If I'm running out the door I'll sip on it and then in an hour at work I have to have something else. haha. I prefer them as snacks.

  3. I love how green smoothies make me feel! We bought giant straw cups so we can bring them to work each morning. . . working on making that happen!

  4. That's my usual go to smoothie :) I tend to add chia seeds though to bulk it up. Love green smoothies.
