Jalapeño Popper Pizza

Oh, what a life…
I’m sitting at my kitchen table drinking an incredible 2007 pinot nior from a family friend. The wine is made by Guerrero Fernandez Winery and you can purchase their wines online, I believe. It’s one of those bottles that I’ve had sitting on my wine rack for at least 6 months. I even hate to say this, but I notice it leaking a little…It’s a wine David and I haven’t had a desire to open in fear that the wine would pour brown! But finally this afternoon we decided to open it. Rainy weather doesn’t particularly make me crave a cold hoppy beer, and the gloomy weather didn’t make me want a chilled chardonnay either. Nope, this weather is the perfect red wine weather. I’m so glad that we decided to open this bottle. It’s seriously fantastic! I’ve gotta see if my dad has anymore, because I need more of this pinot in my life.

I’m making a new chicken sweet potato chili tonight as well, and that’s simmering for about the next 20 minutes. It’s already been on for about 25 minutes. Pumpkin muffins came out of of the oven and they look and smell so wonderful. I’m going to attempt to take some pictures of them and post them later this week or the next week, but be warned, the lighting is terrible…

It’s been a somewhat relaxing weekend. David and I had a great lunch and dinner yesterday that I plan (hopefully!) to write about later in the week, so no spoilers there…I did decide to wash my car and detail the inside just to have it rain later in the day…wonderful!

Anyway, this jalapeño popper pizza is ridiculous. It’s pretty damn amazing, and I’m planning to make it again for our friends Kyle & Sam next Sunday for the Niner’s game. It’s totally football food, and I think any man would love you if you made this for him and his buddies while they watched the game. Then again, I kind of love myself for making this. So, just do yourself a favor and make the damn pizza.

Jalapeño Popper Pizza
Adapted from Damn Delicious
1 pizza dough
4 slices bacon, sliced
2 teaspoons olive oil
2 jalapeño’s, sliced
1 shallot, sliced
4 oz cream cheese, softened
6-8 oz colby jack cheese, shredded (or pepper jack)
corn meal 
1. Preheat oven and pizza stone to 500 degrees
2. In a nonstick skillet; saute bacon until crisp. Remove bacon from grease and set aside on a paper towel lined plate. 
3. In a small bowl; combine jalapeño’s, shallot, and olive oil. Mix until coated. 
4. Sprinkle pizza stone or cookie sheet with a small handful of corn meal. Roll out pizza dough to desired size. Spread softened cream cheese all around dough. Top with shredded cheese, jalapeño’s, and bacon. Bake for about 12-15 minutes until cheese is bubbly and crust is browned. Remove from oven, let sit a few minutes before slicing. Enjoy!

Seriously sounds like a perfect fall day… Squash chili, football worthy pizza, and a glass of red.. I agree on it being perfect weather for red wine right now! As much as I love crisp white wine in the summer, I am a red lover at heart 🙂

I loved reds but have to drink them sparingly. They totally give me headaches easier the next morning. 🙁

Go Niners! Hopefully they win their next game, that way we don’t have a cranky house for the next few weeks. I love jalapeños on my pizza, I wish more pizzerias would have the non-pickled versions as well.

I agree, the cooler/rainy weather makes me want red over white. Pinot Noir is my favorite too. We need to live closer so I can come help you polish off all that wine! 🙂

I love the idea for this pizza, it looks delicious! I’ll have to try it with tempeh bacon sometime!
