Rosemary Turkey Burgers with Cilantro Lime Mayo
Last weekend David, my mom, Dad, and I went up to Truckee for the weekend. Thursday night was spent driving up, but Friday & Saturday we made tasty home cooked meals. One of which was this turkey burger. My mom had gone to Whole Foods on Wednesday to bring the food up with us. The original recipe called for fresh thyme but some how she managed to grab rosemary. I was thinking this might be a weird combination with the cilantro lime mayo, but it actually totally worked!
Before we cooked dinner though, we had lots of fun adventures, of course. Ryder absolutely loves going up to Truckee. We're pretty certain it's his favorite place on earth (or at least favorite of where he's been). He has a nice lawn to run around on, a lake at the end of the street to swim in, and a huge empty field by the lake where he can chase us on quads.
Can't forget Lexi! She is turning into quite the older lady, but she still runs around out by the lake with Ryder just fine. She just doesn't want to play on the grass with him as much as she used to. Lexi is the biggest lover. She'll just come over to you and try to lick your face, which can be a tad annoying. When you don't let her, she'll just lick the air around your face. Not sure what that even means or does for her, but dang, she sure is a lover.
These two kiddo's are pretty fun to watch. After multiple swims, a hard hike on Saturday near Squaw Valley, & chasing us all around on quads these guys were pooped. Aren't they ridiculously cute curled up together? We have so much fun watching these pups.
Anyway, back to the turkey burger. These were very simple to assemble and while the burgers are grilling up, you have plenty of time to put together the cilantro lime mayo. Top the burgers with your favorite toppings. We just had lettuce and fresh homegrown (not from our home...) tomatoes. A turkey burger with those toppings sitting on a Truckee Sourdough Cibatta roll? It really doesn't get much tastier than that. We couldn't have asked for a more delicious meal after a hard hike. Truckee is pretty special and so is this burger!
Rosemary Turkey Burgers
with Cilantro Lime Mayo
Recipe adapted from Marin Mama Cooks
For the Burgers:
1.25 pounds ground turkey
3 scallions, sliced
1 tablespoon Dijon mustard
1 tablespoon fresh rosemary, leaves pulled from stems and finely chopped
salt and pepper
Cilantro Lime Mayo:
1/2 cup mayonaise
4 tablespoons cilantro, chopped
2 teaspoons lime juice
2 garlic cloves, minced
1. Preheat your grill to high heat.
2. In a mixing bowl; combine turkey ingredients and form into 4 patties. Drizzle with olive oil on both sides for no sticking. Grill turkey burgers for 7 minutes on one side. Flip over and grill for about 5-7 more minutes or until cooked thoroughly.
3. In a bowl; combine all the cilantro lime mayo ingredients.
4. Once burgers are cooked assemble burgers by coating both sides of the the buns with the cilantro lime mayo, top with burgers and your favorite toppings.
