Carol’s Potato Salad {Best Potato Salad EVER}

I realize these are probably the most unflattering photos of potato salad, ever. This potato salad also has a pretty lame name. I mean, it’s what my family calls it, so I’m gonna give Carol credit where credit is due, but the name doesn’t really explain why or how this is the.best.potato.salad.ever!

Seriously, it is! 
I’ve yet to meet someone who doesn’t like it. It has bacon in it, guys! A whole pound of bacon to be exact! Yup, this potato salad is definitely diet busting, but it’s totally worth it. It makes the best side dish for a BBQ or camping trip. It’s also rich, so a little goes a lot way. I’ve doubled the recipe from Carol’s, because it seems like the original would only feed 4 people. So, this easily feeds 8. I’ve brought it to BBQ’s lots of times and there’s never any left overs. Last Saturday I even witnessed a girl running back to the bowl for more. That always makes me happy. 
 
I don’t usually claim recipes to be the best of anything ever, but this one is without a doubt my families favorite potato salad recipe. I’m not even sure I like other potato salads anymore…
Carol’s Potato Salad
3 pounds red potatoes
1 pound bacon, sliced
8 green onions, chopped
1.5 cups mayonnaise 
1/4 cup lemon juice
1/4 cup parsley, minced
salt and pepper to taste
1. In a large pot of water, bring potatoes to a boil. Cut the potatoes in half if you want them to cook faster. Remove from pot once done cooking to cool off. Chop potatoes into bite sized pieces.
2. In a large nonstick skillet, cook bacon until crisp. Transfer to a towel lined plate and let cool. 
3. Make dressing by mixing together mayonnaise, lemon juice, parsley, and salt & pepper if needed. 
4. In a large mixing bowl; combine potatoes, bacon, green onions, and dressing. Best to let refrigerate at least 4 hours.
