Spinach Feta Turkey Burgers

I remember a few years back when David and I used to have a season pass at Northstar for snowboarding. We started seeing teenagers wearing neon colored skiing outfits. We’d laugh at them and think they were so weird. To be honest, I still think those kids were weird, but I also have a confession. I’m kind of in love with neon colors right now. Only workout clothes in neon colors. Two nights ago I went to Old Navy and bought a neon pink & neon yellow/green sports bra, and neon yellow/green running shorts, and I kind of love them. I have neon yellow green running shorts sitting on my dresser with a bright pink sports bra, and a light blue tank top and it’s making me very happy.

Those bright colors are totally motivating me to stay active. Mostly because I just want to wear those pretty colors. I’m sure I look pretty ridiculous, but I do workout a lot at home. Mostly on a treadmill in our spare room man cave, and also in our bedroom with some dumbbells.  The neon colors are great though, because it also makes it really easy for people to spot me (if I do decide to wear that outfit running outside).

I guess there was really no point to me talking about neon sportswear, but I do love it, and I think you should get some yourself. It might make you wanna be more active, too.

On a separate note, I made these burgers last week for dinner, and David and I both devoured them. In fact, we loved them so much, I made them again tonight, but served them on a smaller thin bun. I’ll definitely be making these burgers on a regular basis for the next few months. They’re some of the easiest turkey burgers I’ve made to date!

Spinach Feta Turkey Burgers
Recipe from Eat, Live, Run

1 pound ground turkey
1 egg, beaten
5 oz defrosted spinach, water removed
3/4 cup crumbled feta
1 teaspoon salt
1/2 teaspoon fresh ground pepper

1. Preheat grill to medium high heat.

2. In a mixing bow; combine ingredients and shape into 4 burger patties.

3. Grill for about 7 minutes on each side. Serve with burger buns and your favorite toppings.

These look awesome! I love turkey burgers, I’ve added mozzarella but not Feta to them before. Need to try 🙂

I have to be so judicious in my neon clothing selection, or I end up looking like a highlighter!

I need to buy new workout clothes soon, I should look into neon, it would definitely give me energy! I love any kind of turkey burger but especially ones with cheese in them!

I have now made these several times and really love them. Tonight I didn’t have spinach so used kale (blanched as you suggested to me) and they were just as good and maybe even better!

I really love the idea of blanched kale in these. I’ll have to try it out, but I might have to wait until next summer. I’m out of treager pellets! 🙁
