Double Chocolate “Skinny” Banana Muffins

I don’t know what it is lately, but I’ve been on a total muffin kick. I’ve brought you three muffin recipes in one month. That’s pretty unusual for me. I have to admit, these were by far the best muffins out of the three. In fact, they might even be the best muffins I’ve had. Like, ever! 

As I sit here writing this post, I’m almost crying inside that I don’t have another one to eat right now. I’m seriously craving one. They were perfectly sweet without making me feel too guilty about eating a muffin that has the words “double chocolate” in the name.

I love these muffins as much as the new show I’m totally hooked on. Last week it was The Secret Circle, now I’m obsessed with Life Unexpected. It’s funny because the main character from The Secret Circle is one of the main characters in Life Unexpected. I remember when Life Unexpected came on a couple years ago, and I wasn’t really interested, but I wish I had given it another try while it was still on air! It’s just got the perfect amount of drama and comedy in it. Honestly, if you like Parenthood then I think you’d love Life Unexpected. If you’ve ever watched it, what did you think? If you haven’t, and you have access to Netflix Instant then GET ON IT!
 

I know, I know, my life has been sounding so awesome lately with all this t.v. talk, but I swear, I do do other things besides become obsessed with t.v. shows on Netflix, like make the office these amazing muffins. I really can’t tell you enough how good they are. You’ll just have to make them yourself and see. The consistency of these babies are so light and fluffy, but also remind me of a brownie. I’m pretty much in love with them. That is all.

Double Chocolate “Skinny” Banana Muffins
Recipe adapted from Sally’s Baking Addiction

3 large overripe bananas
1 large egg
2/3 cup sugar
1/3 cup plain Greek yogurt
1 cup flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 cup semi-sweet chocolate chips

1. Preheat oven to 375 degrees. Line a muffin tin with 12 muffin liners. Set aside.

2. In a large bowl, smash together the bananas until there are absolutely no lumps. Mix in the egg, sugar, and Greek yogurt. Sift the flour, cocoa powder, salt, baking powder, and baking soda over the wet mixture and stir until just combined. Fold in the chocolate chips, careful not to over mix.

3. Measure out the batter equally amongst the 12 muffin cups, and bake for 18-20 minutes or until done.

My boyfriend watched and loved The Secret Circle! I didn’t watch it with him though, it was one of his “sit and watch all the episodes in a 2 day time-frame while working from home” binges ๐Ÿ™‚

Yum! I’m not usually a big chocolate fan but I do love chocolate and bananas together, and I love muffins! These looks great!

Love that these are ‘skinny’ – they look amazing!

I still haven’t watched Parenthood. I need to get on that (though I’ve heard it can occasionally be really sad? I’m not sure if I’m in the crying mood right now – too stressed with school and work – haha!)

Yes, it can be really sad. I was watching the current season during my treadmill workouts, and I’d be all sweaty and start crying. It was probably pretty weird if anyone would have seen.
