Spiced Carrot Muffins

I probably should have named this post Spiced Carrot Muffins & Random TV Show Ramblings.

I’m in love with a new show.

It’s actually an old show, but it’s on Netflix, so it’s new to me.

What makes me terribly sad is that it only had one season.

What makes me terribly embarrassed is that it’s a CW show.

I’ll share the wonderful show with you. It’s called The Secret Circle.

I’ll tell you how I first came about the show, since it’s so interesting (not).

You see, I have a treadmill in my spare bedroom/the man cave, and I’ve been using said treadmill about 3-4 times a week. I set up my lap top on it, and try to watch a t.v. show that’s 45 minutes. At first it was Season One of Hart of Dixie (also embarrasing), then it was Season Five (or six?) of Private Practice, sometimes it’s Parenthood or Revenge, but I ran out of all those. So, I was browsing Netflix and came across The Secret Circle. A show about teenage witches. Now, if you know me at all, you probably know that I love witch shows, Sabrina the Teenage Witch, Charmed, The Witches of Eastwick, and….that’s all I can think of at the moment, but I love witch shows! So, I gave it a chance. Now, I’m almost finished with the series, and I’m so sad! I don’t want this epic journey to end. I had told myself I’d only watch it on the treadmill, but I totally disobeyed and ended up watching way too many episodes last weekend.

Anyway, I guess that was quite the epic rant about a silly t.v. show. I guess I could talk about these spiced carrot muffins, but I don’t really have much to say. I mean, they’re muffins. Isn’t that enough said? What I liked about these were that they aren’t very sweet. I also liked the spongey texture of them. They go great with your morning coffee, and everyone at the office ate them up. I don’t think they were my mom’s favorite, but I would definitely make them again anyway.

Spiced Carrot Muffins
Adapted from Martha Stewart

1 3/4 cup flour
1/2 cup sugar
2 teaspoon pumpkin pie spice
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup plain Greek yogurt
4 tablespoons melted unsalted butter
1 large egg
2 cups peeled shredded carrots (about 3-4 carrots)

1. Preheat oven to 375 degrees. Line muffin tin with 12 liners.

2. In a medium bowl; whisk together flour, sugar, pumpkin pie spice, baking powder, baking soda, and salt. Create a mound in the center.

3. In a large measuring cup or another bowl; whisk together Greek yogurt, butter, egg, and shredded carrots. Pour wet ingredients into the mound of dry ingredients. Stir until just combined.

4. Measure out batter into baking cups and bake for 15-20 minutes. Remove muffins from tin and cool on a wire wrack.

Notes: Batter may be very dry, but they will still be moist from the carrots once done baking.

Love witch shows. Buffy had my favorite set of witches. My favorite witch movie was The Craft. The soundtrack wooed me in I think. 🙂 And Witches of Eastwick is fun to watch. Have you seen The Good Witch on Hallmark? Totally cheesy and well, hallmarky, but it’s good to watch when you need a feel good movie. I’ll have to look up the Secret Circle on Netflix.

And I love anything involving carrots. I’ll give these muffins a try 🙂

I LOVED the Craft growing up. I actually just watched it again a few months ago and still love it.

I haven’t seen the Good Witch, but I’ll have to check it out.

First the recipe, BOMB! I just ate a cinnamon raisin bagel but I’d make room for 2 to 6 of those muffins!!

I am a Netflix whore and I am now going to try watching the secret circle. When I discovered Vampire Diaries I actually propped my laptop on a basket on my kitchen island so I could cook boxed mac and cheese and not have to pause my episode… We’re classy!!!

I’ve been obsessing over Archer. Because I’m really a 21 year old frat boy, I guess.

I love carrot baked goods 🙂 Very yummy.

Also, I LOVE Sabrina the Teenage Witch (just saw that Hulu added all of the seasons! YES!) I also loved watching Halloweentown, Teen Witch and Escape to Witch Mountain as a kid. I’ll have to check out The Secret Circle 🙂 Sounds like it’d be right up my alley!

I hate it when they cancel favorite shows after one season. I didn’t see that one but I loved Firefly. I hope those yummy looking muffins made you feel better 😉

I love shows about magical powers, just not scary shows! I used to be so jealous of Sabrina in the opening scene when she would change her outfit with a point of a finger – I’d love to have that power! These muffins look awesome!
