Gingerbread Waffles with Cinnamon Syrup

One of my favorite holiday flavors is gingerbread. I love the spiciness of gingerbread and ginger snap cookies. I recently saw a post for vegan gingerbread waffles. The recipe was convenient and easy, but the vegan aspect didn’t really spark my interest all that much. I decided to de-veganize the recipe and call it my own. You can find the original vegan recipe here. I’ve made it twice now and I’m really happy with the way they’ve turned out. I’ll definitely be making this recipe a few more times this fall/winter.

Since we don’t stock maple syrup in the house, I broke down and decided to make my own syrup which was a cinnamon spice syrup. It went great on these waffles. I think you should do yourself a favor and make these waffles this holiday season.

Gingerbread Waffles

1.25 cups flour
1/2 tablespoon baking powder
1 teaspoon cinnamon
1 teaspoon ground ginger
1/4 cup pumpkin puree
1 egg
2 tablespoons molasses
1 tablespoon canola oil
3 tablespoons brown sugar
1 cup milk 

1. Preheat waffle iron.
2. Sift together flour,baking powder, cinnamon, and ginger.
3. In a large bowl; combine together pumpkin, egg, molasses, canola oil, and brown sugar. Stir in milk.
4. Mix in sifted dry ingredients into wet ingredients and stir. Let rest for 5 minutes or until the waffle iron is done preheating.
5. Serve with butter and syrup.

Cinnamon Syrup
Recipe by Love to Cook

1/4 cup sugar
1/4 cup brown sugar
1 Tablespoon flour
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
1/2 cup water

1. Stir all ingredients into a saucepan and stir occasionally for about 5 minutes over medium heat until thickened.

I never think to make waffles but I should more often! I had gingerbread waffles last year and loved them, but I love the idea of adding cinnamon syrup to them!
