Hello! and happy freakin Friday! Thank heavens, right?! I mean, I was so thankful to have Monday off, but dang! It’s been super busy at work, and I’m just beat.
Doesn’t pizza just scream Friday food? It does to me, but the funny thing is, I hardly ever eat it on Friday’s. Pizza is usually mine and David’s Sunday dinner. I’ve talked about how much I love pizza on here before, but then again, who doesn’t love pizza? Fo real, if you don’t like pizza, then honestly, I find you pretty strange!
This pizza is my fall back on pizza. Which means that I usually make it when I don’t feel like trying a new pizza recipe. The ingredients are very simple and it seems to be pretty healthy as far as pizza goes. I mean, a whole bag of spinach goes on this bad boy!
Spinach, Tomato, Goat Cheese Pizza
1 pizza dough
3 garlic cloves, minced
1 tablespoon olive oil
1/4 cup shredded Parmesan cheese
1 (5 oz) bag spinach
3 Roma tomatoes, diced
4 oz goat cheese crumbles
1. Preheat oven to 500 degrees.
2. Roll out pizza dough. Spread olive oil on rolled out dough and sprinkle with garlic, then sprinkle on the Parmesan cheese. Load on the spinach, tomatoes, and top with goat cheese. Bake for 13-15 minutes or until completely cooked.
