Spinach Artichoke Grilled Cheese

If you’re on pintrest you may have seen this recipe recently. As soon as I spotted it, I repinned it, too. It just looked soooo good! If you’re like me, and you love spinach artichoke dip, then I’m sure you thought you’d love this, too.

This week I went crazy with making recipes I pinned every night. This was probably my favorite one. It’s really simple, delicious, impressive, and I can’t stress it enough, DELICIOUS! So, do yourself a favor, make it for lunch, make it for dinner and serve it with a salad or soup, just make it, and make it soon!

Spinach Artichoke Grilled Cheese
recipe from A Couple Cooks

Makes 2-3 sandwiches

1 tablespoon olive oil
2 cloves garlic, minced
1 bag (5 oz) spinach, roughly chopped, stems removed
About 3 canned artichoke hearts, chopped
2 tablespoons sour cream
1 cup shredded cheese
sourdough bread, 4-6 pieces
butter/olive oil to spread on bread
salt to taste

1. Heat a medium skillet over low heat. Add olive oil, and saute garlic for about 1 minute. Stir in spinach and saute until wilted. Add in artichoke hearts, and stir until heated. Stir in sour cream, and salt to taste.
2. Preheat a grill pan over medium heat, butter pieces of bread, layer 1 side with grated cheese, about 1/4 cup spinach artichoke mixture, and more cheese. Grill for about 3-4 minutes on each side or until grill marks appear.

OMG I love spinach artichoke dip! Even when I was a child and hated vegetables. Eating 1/2 the tub with some ritz crackers was my veggie serving for the day haha. This grilled cheese looks seriously amazing though. All that gooey cheese, mmm!
