Nope, I have a feeling it was either the title or possibly the yummy looking pizza.
That is my picture of roasted garlic “paste”. I thought I’d give you a visual to help you out for when you’re making this recipe.
I feel like the before picture of this pizza is beautiful. Even more so than the after picture. I just love how fluffy the crust looks.
This pizza came from an old Rachael Ray recipe that I have modified to fit my own needs. The recipe shows to use mozzarella cheese, and clearly my picture is showing some orange cheese. To be clear, I used colby jack because it’s what I had on hand. Feel free to use whatever you want.
Roasted Garlic, Spinach, Bacon Pizza
1 pizza dough
10-12 garlic cloves
2 teaspoons olive oil
4 slices bacon, cut into 1″ pieces
5 oz fresh spinach
1 cup ricotta cheese, seasoned with salt & pepper
3/4 cup shredded mozzarella cheese
1. Preheat oven to 325 degrees. Cut a piece of aluminum foil about 1 foot long. Place garlic cloves in the middle of the foil, and start to arrange the foil into a little packet. Add 1 teaspoon olive oil and 1 teaspoon water to the garlic. Seal foil packet and place in the oven. Cook for about 30-40 minutes or until garlic is soft. Let cool slightly. Push the garlic out of the skins into a small bowl. Smash the garlic and add 1 teaspoon olive oil to make a “paste”.
2. Preheat oven to 500 degrees. Cook bacon in a skillet until cooked, about 5 minutes. Drain onto a paper towel.
3. Sprinkle about a teaspoon of cornmeal on the bottom of a baking sheet or pizza stone. Roll out pizza dough. Brush dough with garlic paste. Top with as much spinach as you can. Sprinkle with shredded cheese. Dollop ricotta onto the spinach and push down with the back of a spoon. Sprinkle with bacon. Bake for 12-15 minutes.
