Piña Colada Pancakes & A GIVEAWAY

If you’ve paid any attention around these parts, you’d know that I love pancakes. I’ve talked about my love for pancakes many times on here. Saturday or Sunday mornings David & I usually enjoy a nice stack of tasty pancakes. Sure we switch it up sometimes, but mostly we stick with pancakes. I love trying out new pancake recipes, and these ones are killer!

I came up with this recipe after I was contacted by Chobani. They asked if I’d like to receive 6 free 16 oz containers of their yogurt to come up with a recipe. Of course I replied that I’d love to! I decided to combine my love for pancakes with my obsession with coconut. I was happy that I was sent their pineapple flavor because it’s one of my favorites.

These are pretty simple pineapple yogurt pancakes, with a little shredded coconut thrown into the batter & then topped with toasted coconut. Which if you have any wits, you know how amazing toasted coconut is.

Isn’t there just something beautiful about pancakes on the griddle?

I like to see how high my stack of pancakes can get. It could of kept growing, but I capped it off at 12.

The picture above is my actual plate. I ate all three, but I was seriously stuffed! These babies are rich. They feel light and fluffy which I attribute to the Chobani, and they have the perfect pineapple flavor. I even got a few bites with pineapple chucks which was awesome! Pineapple pancakes are delicious and remind me of vacation. 

Piña Colada Pancakes 

1.5 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3 eggs
6 ounces Chobani Pinapple Greek Yogurt
 
3/4 cup water (or light coconut milk) 
1 tablespoon honey
3 tablespoons unsalted butter, melted
1 cup sweetened shredded coconut, divided

1. Preheat oven to 325 degrees. Measure out 3/4 cup coconut, and spread out on a baking sheet. Bake coconut for 15 minutes or until golden. Remove from oven. 
2. Preheat griddle or pan over low-medium heat. 
3. In a large bowl; combine flour, baking powder, baking soda, and salt. 
4. In a separate bowl; combine eggs, yogurt, water, honey, and butter. Mix into the dry ingredient until just combined. Stir in 1/4 cup shredded coconut (not toasted). Pour 1/4 cup batches onto pan and flip when tiny bubbles form. Serve with butter, a drizzle of honey, and toasted coconut on top. Enjoy.

mmm I love Chobani, especially the cherry but I am so more than willing to try vanilla chocolate chunk..YUM! (also think of the deliciously sinful pancakes you could make with that one!)

Yum! These looks so good. Pineapple isn’t my favorite but I would definitely be willing to try these. The vanilla chocolate one sounds too good to be true – I can’t wait to try it!

I love the blueberry Chobani but would love to sample all the others, especially the pineapple!! 😀 How the heck do you make your pancakes so round? I am circular defficent when it comes to making round pancakes/crepes.

I use a 1/4 cup to measure them out and if they’re not perfectly round, I spread them out to make them round with the bottom of the measuring cup. It’s a very exact science… 😉

it says you need three eggs but then the eggs are never mentioned in the recipe???
