I found this recipe about a week ago on one of my favorite blogs, Simply Scratch. It was just what I was looking for. My brothers birthday was last Saturday and I wanted to make him a dessert. I was having Jason over for dinner on a Wednesday night after work for an early birthday dinner, since I was out of town on the day of. I wanted the dessert to be super easy to make, and this fit the bill perfectly.
Jason, David, and I enjoyed our dessert after dinner, then I gave Jason a goodie bag to take home, but I was still left with about 12 more pieces. I decided to take the rest in to the office, otherwise there was no doubt in my mind that I would have polished off the plate by myself. The office devoured them pretty quick, which is always a good sign. I’d say these were a hit! I definitely recommend giving them a try. It’s fun to do spins on old favorites.
Mmm…these go so well with a glass of cold milk, too. A bite of krispie, a sip of milk, doesn’t get better than that!
Chocolate Chip Kahlua Krispies
Recipe from Simply Scratch
6 cups rice cereal
5 cups mini marshmallows or about 40 large
1/4 cup unsalted butter
1/4 cup unsweetened cocoa powder
1/4 cup Kahlua
3/4 cup mini chocolate chips
1. Lightly spray a 9″x13″ baking dish with nonstick cooking spray. Line with parchment paper and spray again. This will make it very easy to remove the krispies from the dish and easy for cutting.
2. In a large pot over low heat, melt butter. Add in marshmallows and melt into the butter. Remove from heat, add in the cocoa powder and Kahlua. Stir until combined and smooth. Stir in the rice cereal until completely coated.
3. Pour krispies into the prepared baking dish and smooth out with the back of a spoon or your clean hands. Sprinkle mini chocolate chips on top and press into the krispies. Let cool completely before removing from baking dish and cutting into squares.
