Last Friday when I got home from work I needed something sweet. Problem is, in our house by Friday there isn’t much to work with. I do all my shopping on Sundays for during the week, and well, to be honest, I don’t keep things like chocolate chips on hand. If I have chocolate chips, I use them up immediately. So, when I had a craving for cookies, I wanted to make some banana oatmeal chocolate chip cookies, but I had to settle with sans chocolate chips. Let me tell you, I’m totally okay with that. Even though I love chocolate, I love these cookies sans chocolate chips!
These cookies are just the perfect sweetness. If you add chocolate chips then I’d say they’re more of a dessert cookie, but without the chocolate chips, these cookies are totally acceptable as breakfast cookies! Breakfast cookies are the best. I really love how much these reminded me of banana bread but in cookie form. The old-fashioned oats really give them a great texture. I froze half the batch already shaped, and stuck another batch in the oven yesterday morning. Two were the perfect morning snack at work. With or without chocolate chips, I think you’ll enjoy these!
Banana Oatmeal Cookies

1/2 cup mashed bananas (1 large or 2 small)
1/2 cup packed brown sugar
1/4 cup sugar
1/4 cup unsalted softened butter
1 teaspoon vanilla extract
1 large egg
1/4 cup flour
2 cups old-fashioned oats
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chocolate chips (optional)
1. Preheat oven to 350 degrees
2. In the bowl of an electric mixer; beat together banana, both sugars, & butter. Add in vanilla, and beat in egg until combined. Mix in flour, oats, baking soda, and salt. If using chocolate chips, stir them in by hand.
3. Shape into 1 heaping tablespoon balls and place on a greased or lined with parchment paper baking sheet. Bake for 16 minutes. Remove from oven and let sit for 2 minutes before moving to a cooling rack.
