Pina Colada Fruit Dip

by Kelli H. on July 15, 2012

In June 2011 I went to a beer festival. One of the girls that we met up with there, Laura, mentioned this food stand we had to try. They had beautiful platters of fruits and veggies. One of their fruit platters had a fruit dip. I’d never tried a fruit dip before, but I took Laura’s advise and tried it. I was not disappointed! I went back to the same beer festival this past June, and was so excited to try the fruit dip again. Who knew I’d love fruit dip so much?! After the first time I tried it, I had randomly came across a recipe for Pina Colada Dip. I’ve been waiting to try this recipe for about a year. I had it bookmarked under “Appetizers”. I finally had the chance to make it last Saturday.

I brought this dip to my Aunt Shellie’s birthday BBQ. I served it with strawberries, mango, peaches, and nectarines. I was a little worried no one would like it, but everyone raved about it! So it was a hit to say the least. It’s super simple to make, and you can do it by hand, like I did. You get a bonus arm workout that way! I definitely recommend trying this out as an appetizer to any get together, or it could even work as a dessert.

Pina Colada Fruit Dip
Recipe from ValSoCal

1 (8oz) package cream cheese, softened
1 (7oz) jar marshmallow creme
1 (8oz) can crushed pineapple, drained
1/2 cup flaked coconut
assorted fruits

1. In a bowl, mix together cream cheese and marshmallow creme until it comes together and fluffy. Fold in pineapple and coconut. Chill in the refrigerator until serving alongside your favorite fruits.

It’s called Beerfest “The Good One”, it’s the first Saturday every June.

Anything that has coconut or pineapple in it I am willing to try. Sounds so tropical and tasty 🙂 I think I will make this for our house warming party!
