Key Lime Ice Cream Pie

This recipe reminds me of Sandra Lee Semi-Homemade Cooking or something along those limes. I made this pie for my Aunt Shellie’s birthday last weekend. She’s a key lime pie lover, but since we were having such warm weather last week, I thought about turning that idea into a frozen one.

It contains very simple ingredients and doesn’t take long to make. Yeah…the ingredient list isn’t too healthy, but who cares on a birthday?! I sure don’t.

I was a little worried about how sour or rather tangy the end product was, but Shellie & my nanny both loved it. My nanny even e-mailed and asked me to make it for her birthday in November! I guess you could say any key lime lover would appreciate this frozen treat.

Key Lime Ice Cream Pie

Crust:
20 graham crackers, finely crushed to equal 1 1/2 cups
4-6 tablespoons melted butter
3 tablespoons sugar

Filling:
1 quart vanilla ice cream, softened
1 (4 oz) container of cool whip, softened
1 (12 oz) container limeade concentrate, defrosted
2 drops green food coloring (optional)
1 lime, sliced (optional)

1. Preheat oven to 350 degrees. In a bowl; combine crushed graham crackers, butter, and sugar. Using the back of a spoon or your clean hands, press into the bottom and sides of a pie dish. Bake for 10 minutes and cool completely.
2. In the bowl of a mixer;  beat ice cream, cool whip, limeade concentrate, & green food coloring together. Pour into the baked pie shell, and smooth out the top. Refrigerate immediately for about 4 hours. Garnish with lime slices and any leftover graham cracker crumbs. Before serving, let sit out for about 10 minutes.

Notes:
I wasn’t able to find a 4 oz container of cool whip, so I bought an 8 oz and used half.
Using the whole container of the concentrate is pretty sour, you may want to pour in half first, taste it, and add more if needed.
My ice cream container contained 1.5 quarts, make sure to use 1 quart or it probably won’t fit your pie pan!

You’re like the siren of citrus delights šŸ™‚ I love lime (especially on margaritas and moijtos) and this pie sounds delightful for a hot summer day.

This was the best pie…”well actually tied with the Key Lime pie you made me last year for my b-day”…i loved it!!!! and next time i want to be a pig and not share it with anyone…heehee
