Blue Cheese Coleslaw

Yesterday was a good day. It was a hot summer day, reaching almost 100 degrees. It was also 7/11, which meant I redeemed my free Slurpee! Granted it’s a tiny free cup, it’s still free, and I was able to sip on my cherry flavored drink in the hot weather. I also had some girl talk with my friend at her pool. She’s getting married less than a month after me, so it’s fun talking weddings with her. To end the night, I came home and barbequed some bratwursts on the grill. While the sausages were grilling, I made a delicious slaw as the side dish. I’d say yesterday was in fact a great day.

I tend to like simple things. Girl talk in the pool, barbeque with the boy, free Slurpee…yup, doesn’t take much to make me happy! What really made last nights dinner, was this delicious blue cheese coleslaw. If you’re not a fan of blue cheese, then no, obviously you won’t like this. If you’re skeptical about blue cheese, I’d say give it a try, and if you love blue cheese, then I’d say YOU’RE GOING TO LOVE THIS. Something about the saltiness of the blue cheese combined with the sweet dressing and the crispy cabbage makes this a winner. I know I’ll be repeating this recipe for years to come.

Blue Cheese Coleslaw
Recipe by Cooking Classy

1 (16oz) bag coleslaw
1/3 cup mayonnaise
3 Tablespoons milk
1 Tablespoon apple cider vinegar
1/2 Tablespoon lemon juice
2 Tablespoons sugar
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon salt
fresh ground pepper
3/4 cup crumbled blue cheese.

1. Pour coleslaw into a large bowl.
2. In a small bowl; combine mayonnaise through pepper. Pour dressing over coleslaw. Fold in blue cheese, and refrigerate for 30 minutes before serving.

this sounds fantastic! definitely a perfect accompaniment for grilled brats. =) and i can’t believe i missed free slurpee day yesterday – tragic!

Darn, I totally forgot about 7/11! Maybe next year.
