Banana Crumb Muffins


I've realized lately there isn't much I love more than muffins. Well, maybe cupcakes. But muffins are pretty darn good. Especially when they have bananas in them! This is the perfect mid morning snack at work. It's sweet, but doesn't leave you weighed down. I highly recommend giving them a try next time you have some bananas on hand that look like these:


Maybe it's just me, but I'm pretty superficial when it comes to fruit. You'd have to pay me money to eat those bananas. When I see bananas on my counter like that, I feel bad for them for about .25 seconds until I decide to cut them up and freeze them for later, or smash them up and bake them into sweet morsels.


I'd much rather have my ugly bananas look like whats in those muffin tins than just some ugly brown, soft, spotty bananas -- yuck!


So go ahead, make these muffins! I'm sure you have some ugly bananas around your kitchen on occasion. I can't be the only one that lets my bananas turn brown.

Banana Crumb Muffins
Recipe from Annie's Eats

For the muffins:
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
½ teaspoon cinnamon
1/3 cup butter, melted

For the topping:
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter  
 

1. Preheat oven to 375 degrees. Line muffin tin with 12 liners. 
2. In a large bowl; mix together flour, baking soda, baking powder, and salt. In a medium bowl; combine bananas, sugar, egg, cinnamon, and melted butter. Pour wet mixture into the dry mixture and stir until just combined. Spoon into muffin liners. Best way is to use an ice cream scoop. 
3. In a small bowl; combine brown sugar, flour, cinnamon, and cut in butter. Mixture should be crumbly. Sprinkle a little onto each muffin. 
4. Bake for 18-20 minutes or until a toothpick inserted in the comes out clean.

  2. Yum! I love banana muffins. My favorite ones I made were Raspberry Banana http://eathealthybehappylivewell.wordpress.com/2011/09/05/pamelas-gluten-free-mix-review/. I can't wait for my raspberry bushes to start producing so I can make them again!

    Don't worry, you're not the only one who lets her bananas go brown! I have one on my counter right now :)
