Broccoli Pasta with Peanut Sauce


I found this recipe on good ol' foodgawker. I made it about a month ago and then made it again last week. I love when I find a new, reliable, easy, tasty recipe. I've kind of been on an homemade Asian food kick lately. I'm not sure what it is, but I really love cooking Asian food. I think it tastes so much better than buying it at a restaurant.


I think I like the fact that it's usually quick to prepare and it looks pretty, too! I love lots of garnishes on Asian food, like those peanuts and scallions. Yum! Plus, isn't it so fun to eat with chop sticks?

Broccoli Pasta with Peanut Sauce
Recipe slightly adapted from Will Cook For Friends

For the pasta:
1/2 lb. linguini
1 tablespoon canola or peanut oil
2 large heads of broccoli, cut into small florets
3 cloves garlic, minced
1 tsp. ginger powder (or 1/2 tsp. freshly grated ginger)
2 tablespoons tamari or soy sauce

For the sauce:

1/2 cup natural peanut butter
1/2 cup hot water
1/4 cup apple cider vinegar
2 tablespoons tamari or soy sauce
2 tablespoons molasses
1/4 teaspoon red pepper flakes

Garnish:
chopped peanuts
chopped scallions

1. Bring a large pot of water to a boil. Cook linguini until al dente. Drain and set aside.
2. In a wok or large pan, heat oil over medium high heat. Add broccoli and cook for about 1-2 minutes. Add garlic and stir. Stir in the ginger or ginger powder. Pour in the tamari sauce. Remove from heat.
3. In a bowl, combine the peanut butter and hot water. Stir in the remaining ingredients.
4. Add the cooked linguini to the wok or pan with the broccoli and the peanut sauce. Stir together and garnish with chopped peanuts and scallions.

Notes:
You could easily add chicken or another preferred protein to this dish.
This serves about 2-3 people.

  1. Yum, I love broccoli and peanut sauce together .. I do not love using chopsticks though! I have a few pairs but only for food props, then I switch to a fork :)

  2. Usually we go out for Asian cusine. Occasionally I drop a block of frozen stiry fry into the wok and cook it up and sevre with edaname. That's as Asian as I get at home. LOL.

  3. Eating with chop sticks is also good for me because it forces me to slow down. This looks tasty!

  4. I like Asian food. I usually make it at home, but I top it with pre-made sauce. I actually have all those ingredients though for the sauce, so I think I might have to try making my own.

  5. I need to try to make Asian food more often! It's way too easy these days to just order it out on the internet in two clicks! This sounds like a good recipe for a newbie!!
