PB&J Cookies

I made these cookies last Saturday, and I have to be honest, I became a monster. I was very reminiscent of the cookie monster. I’m not exaggerating when I say I can’t even count how many I ate. I’m not usually like that, but they were so good! Plus, they only have 1/2 a stick of butter in them, so they’re not bad for you, right? I mean the fact that they have a cup of sugar and peanut butter doesn’t matter, righttttttt?

PB&J Cookies
Recipe by Rachael Ray Everyday

1/2 cup flour
1/2 teaspoon baking powder
1 cup creamy peanut butter
1/2 cup unsalted butter, room temp.
3/4 cup granulated sugar
1/4 cup brown sugar
1 large egg
strawberry jelly
1/4 cup plus 2 tablespoon confections’ sugar
1 1/2 tablespoons whole milk

1. Preheat oven to 350 degrees. In the bowl of  an electric mixer, blend 3/4 cup of the peanut butter with butter on medium speed.  Add granulated and brown sugar and beat until smooth, about 5 minutes. Beat in egg until incorporated. Beat in flour and baking powder on low until thoroughly incorporated.
2. On an ungreased baking sheet, measure out 1 tablespoon balls of dough and place about 2 inches apart. Use the back of your thumb and press down in the middle to create a small crater. Spoon about 1/2 teaspoon of jelly into each center. Bake for about 12-15 minutes. Remove and cool on a rack.
3. In a small bowl, beat together 1/4 cup peanut butter and confectioners sugar. Whisk in milk, a little at a time, until frosting is a good consistency for piping. Use a resealable plastic bag with a tiny corner snipped off, and pipe frosting over cookies.

I get in cookie monster mood with cookie dough! I don’t think I know how much I’ve eaten when it’s not in countable, cookie form. These look amazing! I love pb&j sandwiches and can only imagine the combo being better as cookies 🙂
