Broccoli Cheddar Soup

Happy Presidents Day! I hope most of you have it off and aren’t working too hard today. Luckily, I have today off. I love three-day weekends! Then again, who doesn’t?

This soup was one I found on foodgawker. I gotta say, I find lots of recipes on foodgawker, but then when I go to make them, they are not good. They sure might look beautiful but I’ll find lots of errors in the recipes, or steps that just don’t make sense. You gotte be careful on there! They’ll accept beautiful pictures, but it’s not like these recipes are tested. Well, you don’t have to worry about this one, I tested it for you, and this soup was delicious! David and I both loved it, and the recipe was so easy!

Broccoli Cheddar Soup
Recipe from Kristen’s Kitchen

2 tablespoons butter or olive oil
1 medium onion, chopped
2 garlic cloves, minced
3 cups broccoli, cut into small florets
2 medium gold Yukon potatoes, diced small
4 cups chicken (or vegetable) broth
1 1/2 cups cheddar cheese, grated
1/4 cup half and half
S&P to taste

1. In a dutch oven or large pot, melt butter over medium heat. Add onion and saute until soft. Add garlic and stir 1 minute, add broccoli, potatoes, and broth.
2. Bring broth to a boil, turn down heat to a simmer, cover and cook for about 10-15 minutes or until potatoes are tender.
3. Remove from heat, and stir in cheddar cheese. Using an immersion blender or blender, puree soup until smooth. Stir in half and half, season with salt and pepper, and top with additional cheese.

Notes: I think this soup would be so tasty in a bread bowl!

This looks great kelli! I love broccoli and cheddar soup. And it sounds like it would be incredible in a bread bowl!!
