Sausage & Lentil Stew

I saw this recipe back in September in Rachael Ray’s magazine and immediately tore it out. It sounded so good, I knew I’d be making it this winter. As soon as January rolled around I felt like I needed a hearty soup and this recipe fit the bill perfectly.

I deemed it my favorite soup that night. Looking back at it and writing up the recipe, I’m pretty much salivating. Is it lunch time yet?!
I’m sorry vegetarians, this soup is not for you. But don’t worry, I’m actually working on a vegetarian lentil soup right now. It’s simmering away as I type this up. Maybe I’ll share that one next week. That is, if it turns out to be a success.
I can’t really recommend this soup enough. If you’re a meat eater (I am in limited quantities), and you love sausage (I DO! more than bacon, people), then this soup is a keeper. 

Sausage & Lentil Stew
Adapted from Rachael Ray Every Day October 2011
1 Tablespoon olive oil
1 lb. ground sweet Italian sausage
1 onion, chopped
1 large carrot, chopped
3 cloves garlic, finely chopped
1 teaspoon dried Italian seasoning
1 cup lentils (brown or green, not red), rinsed
1 quart chicken broth
1 bunch kale, rinsed and torn roughly into pieces

1. In a Dutch oven, heat olive oil over medium-high heat. Add sausage and cook until browned; using a slotted spoon, transfer to a bowl.
2. Add onion and carrot to the pot and cook until slightly softened. Stir in garlic and Italian seasoning and stir for about 1 minute. Add lentils, broth, and 3 cups of water. Bring to a boil, lower heat and simmer, covered, for 30 minutes or until lentils are tender.
3. Stir in kale and sausage. Cook until kale is wilted, should only take a couple of minutes. Season with salt and pepper.

Do you eat lentils often?
I’m not a huge lentil eater, but I really like them. 
I’m going to try to incorporate them into my diet more this year.

This looks just delicious, Kelli! I have been craving kale lately (strange, I know) and I love love the addition of sausage or bacon in pretty much anything! I’m adding this to my list of meals to make this week!

I don’t eat lentils often because my lazy self usually opts for easy canned beans, but I do really like them.

I know what you mean, during the week I always opt for canned beans in my soups/chili’s. They’re so easy & convenient. I usually use lentils on the weekends when I have more time.

Oooh that looks good! I am planning to make something with kale tonight, too 🙂 I don’t eat lentils too often but I used to when I was growing up because my parents love them.

I made this soup last weekend…and had it all week for lunch, everyday it got better and better. I am going to Make it on a cold winter night and bring some down for Nana…she would love it!
