Pumpkin Quinoa Chili {with turkey!}

I’m one of those people that creates a recipe and wants to name it Kelli’s Chili. How original, huh? It seems like recipe names are so long these days, but I understand why. We want to know what’s in the recipe without reading every ingredient. At least I think that’s why…I mean, I wanted you to see this chili has PUMPKIN in it. That’s pretty cool! I wanted you to see that there is QUINOA in this chili! That’s very cool! But, I felt like naming it Pumpkin Turkey Quinoa Chili is too darn long. But, then I had to tell the vegetarians, yes, this one has meat. I’m sorry, but sometimes it happens in my house. Sometimes, I splurge for the good stuff.

I’m going with Pumpkin Quinoa Chili because that’s really what makes it different than most chili recipes, right?

You know what really makes chili amazing? The fixins’, the toppings, the garnishes, whatever you wanna call them. In my book, chili must be served with fixins’. I like cheese (duh!), cilantro (duh!), jalapeno, more onion, sour cream/greek yogurt. Whatever floats your boat.

I hope you meat eaters try out this very satisfying different chili recipe. I think you’ll be pleased with the outcome.

Pumpkin Quinoa Chili {with turkey!}

2 teaspoon olive oil
1 onion, chopped
1 green or red bell pepper, chopped
1 pound ground turkey
3 garlic cloves, chopped
2 Tablespoons chili powder
2 teaspoons cumin
1 teaspoon corriander
1/2 teaspoon dried oregano
1 (28 oz) can diced tomatoes, with juice
1 cup pumpkin puree
1/3 cup quinoa

Toppings: cheddar cheese, jalapeno, and cilantro

1. Heat large pot over medium high heat. Pour in a swig of olive oil and saute onion and peppers for about 3-5 minutes. Add in ground turkey and cook until no longer pink. Add in garlic and stir for 1 minute. Pour in all seasonings and stir to coat evenly. Pour in tomatoes and pumpkin puree; stir to combine. Add quinoa, cover, lower heat, and simmer for 20-25 minutes or until quinoa is thoroughly cooked through.

I always wanted to create a dish after my name too! But I have yet to create a unique meal enough to do that. One day though!

Your chili sounds awesome! I never really had chili (or that I could remember) but the addition of pumpkin and quinoa (for extra protein) sounds fantastic! 🙂

Haha, I’ve totally named recipes after myself. 🙂 I think it sounds a little more personal.
This chili honestly looks amazing. I can only imagine how incredible the pumpkin and turkey tastes in there!! My favorite chili toppings are definitely cheese and guacamole. But I add guac to everything. 🙂

Haha, names of recipes are super long. It’s like how many nouns can I put in one title? Gosh. This chili does look so tasty, especially since it’s so unique. I’ve never heard of a chili like it. I say name in Kelly’s Chili.
