Veggie Quinoa Fajita Burritos or Bowls

The reason I say burritos or bowls is because I actually preferred this recipe in just a bowl. David preferred eating them as burritos. Try both ways!

If your strapped on time make the quinoa ahead of time! I made it that morning before work so that when I got home from yoga at almost 7 P.M. I wouldn’t have to wait.

I’ll be making these Mexican flavored quinoa bowls in the future repeatedly while David is in school. 

Veggie Quinoa Fajita Burritos
Highly adapted from Rachael Ray Everyday October 2011

1 cup quinoa
2 cups water
1 T olive oil
1 green bell pepper, thinly sliced
1 red onion, thinly sliced
1 T chili powder
1 can (15 oz) pinto beans, drained & rinsed
1 cup tomato salsa
6 oz shredded jack cheese
4 large flour tortillas

1. In a medium pot bring 2 cups water to a boil. Add rinsed quinoa to the pot and stir. Lower heat to a simmer and cover pot for 20 minutes. Fluff with a fork.
2. In a medium skillet, heat olive oil and add he onion and pepper. Cook veggies until tender, about 5 minutes. Stir in the chili powder and season with salt and pepper.
3. Dividing evenly, spread the quinoa, onion-pepper mixture, beans, salsa, and cheese over the tortillas. Roll the tortillas burrito style.

If you want to make this a quinoa bowl, add quinoa to a bowl and mix with about 2 tablespoons salsa. Add on pepper-onion mixture, beans, and top with jack cheese. This is seriously so good and you don’t even need the tortilla!

**This picture is from last night. I made them again already! This time I didn’t have pintos on hand so I didn’t use them and I used a red bell, some random pepper from the farm, and a can of chili peppers. I also used mozzarella because it’s all I had (pretend it’s jack!). You can play around with these however and they will be super bomb!

Im eating gluten free (mostly) right now and I never would have thought of using quinoa in burritos and bowls. Such a great diea!!
