Spinach, Pasta, & Pea Soup

It may not be the prettiest soup in the world but definitely one of the best if your sick.

David was sick not too long ago and I love making soup for sickies! This one was great because it was super easy and ready in a jiffy!

You don’t need to be sick to enjoy this soup but if you are or someone you love is sick then it’s perfect!

Spinach, Pasta, & Pea Soup
Adapted by Cooking Light October 2011 

1 T olive oil
3 garlic cloves, minced
3 green onions, thinly sliced
4 cups chicken broth (or veggie if your vegetarian) 
2 cups water
3/4 cup uncooked orzo
1 T lemon zest
1 can chickpeas (garbanzo beans), drained
1 T  chopped fresh oregano (or about 1/2 teaspoon dried)
1 T lemon juice
1/2 t fresh black pepper
1/8 t salt
6 oz fresh baby spinach 
1/3 cup parmesan cheese


1. Heat a large pot over medium-high heat. Add olive oil and swirl to coat. Add garlic and onion and saute for about 30 seconds. Add chicken broth and water; bring to a boil. Add orzo, lemon zest, and chickpeas. Cover and cook 10 minutes or until orzo is done. Stir in oregano, lemon juice, pepper, salt, and spinach. Ladle soup in bowls and top with parmesan cheese.

I love soup when I’m sick, but I also like it when I’m feeling good. I made a huge pot of bean soup last night and can’t wait to finish it tonight for dinner.
