Mexican Meat Loaf

This is hands down my favorite meat loaf recipe. If you know someone or if you are someone who is not a meat loaf fan then try this one! You may discover that you love it and didn’t even know. Meat loaf really isn’t all that fun to photograph so I decided to use my “cool phone app” to take the pictures of this one.


 I had this with sauteed zucchini and it was a great side for it. Meat loaf is really easy to make. Just make sure you give yourself enough time to bake in the oven, so don’t start making it when you’re starving.
Mexican Meat Loaf
1 medium green bell pepper, chopped
1 small onion, finely chopped
3 garlic cloves, minced
1 t olive oil
1.25 pounds ground turkey
4 (6-inch) corn tortillas, finely chopped
3/4 cup cheddar cheese, divided
1/2 cup salsa
1 egg, beaten
1 t cumin
1 t ground oregano
1 t salt
1. Preheat oven to 350 degrees. In a medium skillet over medium heat, saute bell pepper, onion, and garlic in olive oil for about 5 minutes or until tender. Remove from heat and cool slightly. 
2. Gently combine bell pepper mixture and all remaining ingredients, except for 1/4 cup of the cheese. Place in a loaf pan and bake 55 to 60 minutes. Sprinkle with remaining 1/4 cup of cheese during last 5 minutes. Let stand 10 minutes before serving.
David and I recently tried Widmer Brother’s Black IPA.  I’d never tasted a black IPA before so I was SUPER excited to try it. I really liked it and David LOVED it. It had a great malty flavor with a bit less hops compared to a regular IPA that we’re used to. The black color was really cool since I don’t normally drink black or brown beers. It made me feel pretty hard core.
We’re starting a new tradition of tasting a new beer every Friday night and this one was great to start that tradition.

Yummmm… Mexican Meat Loaf is so bomb! And that Pitch Black IPA is seriously an excellent brew. Can’t wait to have another this weekend!

This really is a good recipe for meatloaf. Now, I know what to do with that salsa in my fridge – I especially love meatloaf sandwiches the next day… You sure made me want to try the Black IPA after reading this and I never even heard of a black IPA… like it… like it… yes!
