Blackberry Cobbler

Back in July I was on a hike with my mom in Annadel State Park and we passed a ton of blackberry bushes. I commented that we should come back out in a month or so to pick blackberries. Well, a month went by and then another month and the blackberries around here were still not ripe! I was at my parents house last Saturday and we decided to go back out in Annadel and check on the blackberries. There were still tons of red ones that will most likely not turn but we did manage to get about 8 cups!

We knew we were going out to sushi for dinner and it was already 5:30 so rather than making a blackberry pie we looked up blackberry cobbler recipes. We found this recipe and it was delicious! There’s nothing like picking your own berries and then enjoying a fresh dessert that night. It was a little sour but still very enjoyable.

We doubled the recipe since we had so many.

Blackberry Cobbler
Adapted by Simply Recipes

Berry Mixture:
 4 cups blackberries, rinsed clean
1/2 cup sugar (less or more to taste)
1 teaspoon lemon zest
1 teaspoon lemon juice
1/4 teaspoon cinnamon
1 1/2 Tbsp cornstarch

3 Tbsp sugar
1 cup all purpose flour
1 1/2 teaspoon baking powder
1/4 teaspoon salt
4 Tbsp butter
1/4 cup milk
1 egg, lightly beaten

1. Place berry mixture ingredients in a 9″x9″ casserole dish. Stir to coat the berries evenly with the sugar. Let sit for 30 minutes.
2. Preheat oven to 350°F. In a medium sized bowl, whisk together 3 tablespoons of sugar, the flour, baking powder, and salt. Cut the butter in with a pastry blender or fork (or hands!) until the mixture resembles coarse crumbs. Use a spoon to stir in the egg and milk until the batter is just moistened.
3. Taking large spoonfuls, drop the batter mixture over the berries. Bake in oven for 30-35 minutes or until the berry mixture is bubbly and the topping is nicely browned.

This would be so delicious with vanilla ice cream!

my dad loves blackberry cobbler so i definitely need to save this recipe for him!

I love blackberries. They are the best. This cobbler looks fab. You should bake for a living.
