If you need a detox from all that sugar, try making this salad this week. It will make you feel healthy but also satisfied
Apple & Spinach Salad
from Annies Eats
For the dressing:
1/4 cup minced sweet onion
3 T apple cider vinegar
3 T white wine or champagne vinegar
2 T sesame seeds
2 T granulated sugar
pinch of paprika
1/2 cup olive oil
For the almonds:
2 T unsalted butter
3/4 cup slivered almonds
1 T granulated sugar
For the salad:
10 oz baby spinach
2 medium apples, thinly sliced
4 oz crumbled feta
1. Combine onion, apple cider vinegar, white wine vinegar, sesame seeds, sugar, and paprika in a bowl or jar. Whisk in oil or pour in jar and shake vigorously until emulsified. Set aside.
2. In a medium size saute pan melt butter over medium heat. Add in the almonds and cook until lightly browned. This took me about 10-15 minutes. Don't burn! Keep a close eye on them. Add in sugar and stir until sugar had melted. Set aside.
3. In a large bowl mix spinach with dressing. I also like to add a little salt and pepper to the spinach leaves at this time. Set dressed spinach on plates and top with apples, almonds, and feta. Serve immediately.
**Note: since I made this for just David and I, I used a 5 oz bag of spinach & 1 apple and then used the rest of everything for lunch the next day. Perfect for an easy dinner and left over salad for lunch.

ReplyDeleteI tried the apple and spinach salad and found it very tasty. I sprinkled a little less of the feta, (not a fan) and it was perfect.
