The Joy’s of Being an Adult

Last Sunday I came home from the store and made a delicious sandwich. I had fresh rosemary ciabatta from Whole Foods and I made my favorite sandwich for David and I. A vegetarian sandwich with hummus, sprouts, cucumber, red onion, and avocado. 
I’m telling you, that is a vegetarians sandwich dream! 
It’s absolutely to-die-for! I occasionally make them on Sunday’s for me and David and we both love them.
We then opened up a bottle of Kendall Jackson Vintners Reserve 2003 Riesling I had picked up from my parent’s house. They’ve been in the process of remodeling a few rooms in their house and they went through all their wine and only saved a select few which left about 100 bottles of wine to pick over and see which ones I would like. I had no idea if the Riesling would be any good because I’m not sure if white wines age well like some red wines. We opened the bottle and it smelled so sweet and the color was golden, almost like honey. We practically drank that whole bottle during our lunch and afternoon. While we were eating I said to David, “this is what is great about being an adult”. I feel like I’m usually so preoccupied with the burdens of being an adult (cleaning house, paying bills, saving, etc.) that I sometimes forget how great being an adult is! It’s the little things in life that make us happy.

That meal looks like my happy place- delicious sandwich and wine- YUM!! I look forward to enjoying the greatness of being an adult again, soon.
I do think the ability to crack open a cold beer or glass of wine during the day on a weekend is a great adult ‘treat’. It always makes me feel scandalous having a drink during the day and I love it!

That sandwich looks incredible! The bread makes me want to take a big, chewy bite.

I love being able to do what I want when I feel like it!

I love ciabatta bread! I like using it for a tomato and mozzarella panini that taste just like Panera’s! It’s sooo good!

actually i think its safe to say that the sandwich could easily be a meat eaters dream too! it looks so healthy but at the same time so delicious!
