BBQ Chicken Tortilla Pizzas

I recently spotted this recipe in the new Rachael Ray Everyday magazine. I was rather surprised since a few months ago they changed the layout of the magazine and now I never find any good recipes. It’s really too bad because I used to love that that magazine! Luckily, I spotted this one.

It’s a simple dinner but a sure tasty one!
BBQ Chicken Tortilla Pizzas
Adapted from Rachael Ray Everyday
4 corn tortillas
2 T neufchâtel cheese   <— 1/3rd the fat of cream cheese!
1 C shredded cooked chicken
2 T BBQ sauce
1/2 C shredded jack cheese
1/4 C sliced red onions
1/4 C shredded cabbage

1. Preheat oven to 375 degrees. 
2. Spread a little neufchâtel cheese onto each tortilla. 
3. Toss chicken with BBQ sauce and divide among tortillas. Top chicken with jack cheese and red onions. 
4. Bake in oven for 15 minutes. Top with cabbage and cut like a pizza.

**This recipe makes enough for 2 people but it’s definitely adaptable to work for more people.

I’ve never heard of that cheese! What is it and where do you find it??

I use to read cooking light, but I cancelled my subscription a few years ago. Now I just read blogs 😀

It’s usually right next to the cream cheese. Should be at any regular grocery store or even Whole Foods.
