Chocolate-Chocolate Chip Muffins

I’m a little embarrassed to admit that I hadn’t had a muffin in who knows how long.  Luckily I changed that last weekend and made these little chocolatey delights. They are SO simple and I love baking that doesn’t require my kitchen aid mixer.  Don’t get me wrong, I love that mixer but at the same time, I don’t have room to leave it on my counter so every time I use it I have to lug that 40 pound mixer from where I store it to my kitchen.  Wow – arm work!

So anyway, I loved these muffins because 
1) they are chocolatey!
2) they have a secret ingredient!
Who doesn’t love a secret ingredient?!  The secret ingredient is…
Red Wine Vinegar
It’s just a tablespoon but still – I love things with secret unsuspecting ingredients.
Chocolate-Chocolate Chip Muffins
Adapted from Cooking Light May 2011
1 3/4 cups all-purpose flour
1/2 cup brown sugar
1/4 cup unsweetened cocoa
1 t baking powder
1 t baking soda
1/4 t salt
1 cup warm water
1/4 cup  canola oil
1 T red wine vinegar
1 t vanilla extract
1 large egg, lightly beaten
1/2 cup semisweet chocolate chips  
Cooking Spray 
1. Preheat oven to 400 degrees
2. Combine flour and next 5 ingredients (through salt) in a large bowl, stirring with a whisk.  Make a well in center of mixture.  Combine 1 cup warm water and next 4 ingredients (through egg) in a bowl, stirring well with a whisk.  Stir in 1/4 cup chocolate chips.  Add oil mixture to flour mixture, stirring until moist. 
3. Place 12 muffin-cup liners in muffin cups, and coat liners with cooking spray.  Divide batter evenly among prepared muffin cups.  Sprinkle remaining 1/4 cup chocolate chips over batter.  Bake for 15 minutes or until a wooden pick inserted in the center comes out clean.  Cool for 5 minutes in pan on wire rack.

I haven’t had a muffin in a really long time either! I’m really embarrassed to say it’s been a couple of years 🙁 I guess I HAVE to make this recipe! Using red wine vinegar is such a good idea!

I know that vinegar added to baking gives it a more special flavour & consistency! I use a lot cider vinegar in my baking!
