Couscous with Dried Fruit & Feta

There is one BIG reason I love this dish.  It’s ingredients list is so small. I always think that’s nice.  If you’re going to eat it as a meal, which I do sometimes, it’s very light.  It would probably be best as a side dish or perfect to bring to a pot luck or barbeque.

Couscous with Dried Fruit & Feta
Adapted from Rachael Ray Everyday Magazine

1 c whole wheat couscous
1 1/4 c chicken broth (or water if you want vegetarian)
1 c dried cranberries or golden raisins
1 c dried apricots, chopped
1/2 c scallions, chopped
1 c feta cheese crumbles

1. Bring chicken broth to a boil, add in couscous and cover, turn off heat, and set timer for 5 minutes.
2. Once couscous is done, fluff with a fork, combine all ingredients in a large bowl; season with salt and pepper.

What an interesting combo, will have to try it soon. I always need easy meals like this to pack for lunch.
